ALASKA SNOW CRAB CRISPS

Blending snow crab with a minimum of seasons, just a bit of mayonnaise and sour cream combined with a touch of mustard shows off its fresh briny sweetness. These crisps heaped with snow crab will disappear quickly at any party.
2 cups snow crab meat (4 oz.)
Eight 1/2 inch-thick slices Italian peasant bread
2 tbsp. regular or low-fat mayonnaise
2 tsp. sour cream
1/2 tsp. dry mustard
4 tsp. finely chopped chives
Freshly ground pepper

Grill the bread, or toast it in a 350F oven until the bread is golden brown. Using a fork, in a bowl, combine the crab meat, mayonnaise, sour cream, mustard, and 2 tsp. of chives. (reserve some for garnish) Season to taste with pepper. Spread each crisp with one-eighth of the crabmeat mixture. Sprinkle with the remaining chives and serve.
