With a sharp knife, cut crab legs into 2 inch long pieces. Melt butter in
a large, heavy skillet over medium heat. Stir in garlic and cajun spice
mixture; saute 1 to 2 minutes. Add crab and remaining ingredients except
rice. Increase heat to medium-high and bring to a boil, stirring gently.
Cook 3 to 4 minutes, or until crab is well heated. Serve crab and sauce over
rice. Garnish with parsley. Makes 4 servings. Cajun Spice Mixture: Mix together 1/2 tsp. each black pepper,
crushed red pepper flakes and dried thyme. Add 1/4 tsp. each dried oregano
and cayenne pepper until well combined. |
